OATMEAL BROWN BUTTER CREAM PIES

 
 

Oatmeal Brown Butter Cream Pies

Oatmeal Cookie:

1 cup butter (softened)

1 cup light brown sugar

1 cup sugar

2 eggs

2 tsp vanilla

1 1/2 cups flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

3 cups rolled oats

Frosting:

1 (8 oz.) pkg. cream cheese

½ cup butter(browned)

1 tsp. vanilla extract

1 lb powdered sugar

Directions:

1)Preheat oven to 350 degrees F. Or convection 325( I always prefer convection).

2)In a mixer cream together your butter and sugars until smooth.

3)Mix in your eggs until smooth.

4)Add in all your dry ingredients.

5)Slowly add in your rolled oats, don’t over mix.

6)Line your cookie sheet with parchment paper, and scoop your dough with a small/ medium cookie scooper. Bake for 15-20 mins, or until edges are golden brown. Reduce time if making a smaller cookie.

7)While cookies bake start making your frosting by placing butter in a medium saucepan and melt over medium heat, stirring often, until it foams, smells nutty, and browns. This will take about 5 to 7 minutes. Once butter is ready let it completely cool. If you want to speed up the process you can scrape the browned butter into a medium bowl and place the bowl in the refrigerator for 30 minutes or until the butter is completely cooled and is mostly resolidified.

8) In the bowl of a stand mixer, beat the brown butter and cream cheese together until smooth. Add the vanilla and mix again.

9) Slowly mix in the confectioner's sugar, about ¾ cup at a time, until all the sugar has been added. Scrape down the sides of the bowl with a spatula and mix again until smooth.

10) To assemble the cream pies, pipe or spread the filling on the flat side of half of the cookies and put the remaining cookies on top.

Ultimate Halloween Cookies

 
 

Halloween Cookies

Ingredients:

3/4 cup butter(softened)

3/4 cup brown sugar

1/4 cup sugar

2 large eggs

1 tsp vanilla

1(3.4oz) package instant vanilla pudding

1 tsp baking soda

2 & 1/4 cups all-purpose flour

1 cup white chocolate chips

1 cup M&Ms

1 cup crushed Oreos

1/4 cup Sprinkles

Directions:

1)Preheat oven to 350 degrees F.

2)In a mixer cream together your butter, brown sugar and sugar. Mix until all is incorporated.

3)Mix in eggs and vanilla. Mix until smooth.

4)Mix together your pudding mix, flour and baking soda. Slowly add in to your wet ingredients. Mix until all is combined.

5)Mix in your Oreos, sprinkles, white chocolate chips and M&Ms until everything is well incorporated.

6)Line a cookie sheet with parchment paper. Scoop cookies onto cookie sheet. I used a large cookie scoop.

7)Bake cookies for 15-18 minutes or until tops are golden brown. ( I used a large cookie scoop, if you are making them smaller reduce bake time by 5 mins)

8)Let cookies cool and enjoy!

 
 

Funfetti Cookies

 
 

Ingredients:

1/2 cup butter(softened)

2 oz cream cheese

3/4 cups sugar

1 large egg

1 & 1/2 tsp lemon extract

1 & 3/4 cups all-purpose flour

2 tsp cornstarch

1/2 tsp baking soda

3/4 cup jimmies sprinkles( or any sprinkles you have)

Directions:

1)Preheat oven to 350 degrees F or 325 convection.( I always use convection, I highly recommend using it if you have it)

2)Cream together your butter, cream cheese and sugar on low using your paddle attachment, until everything is combined about 3-4 mins. Scrape down bowl as needed.

3)Add in your egg and extract, mix on low until combined, about 2 mins.

4)Slowly add in your dry ingredients( flour, cornstarch and baking soda) mix until just combined.

5)Line your cookie sheet with parchment paper. Scoop out cookie dough with a cookie scoop, then pour your sprinkles into a bowl. Gently roll your cookies into a ball and dip all sides into sprinkles.

6)Bake cookies for 10-12 mins. Let cool, enjoy immediately or store in an airtight container for a few days!
